Three nurses (Carrying their weight in luggage!). 26 hours. 6,766 miles from the Philippines to Manchester Airport. 80 miles by Hull & East Yorkshire Hospitals NHS Trust. One chilly wait in reception (with a temperature drop of 33 degrees in comparison to the Philippines!)… and a trip to get some shopping from Lidl!
That was the journey for three nurses who travelled from Cebu, Philippines to the village of Cottingham, UK. Staff from Resource Finder greeted Karen, Jed, and Elz who were cold (Karen’s face was numb!) and tired after their long journey, but were in good spirits. After being taken to their accommodation within the grounds of the hospital,the Resource Finder team took the group shopping to get some much needed supplies. They then returned to their new homes for some much deserved rest.
Resource Finder have placed many nurses from the Philippines in NHS Hospitals this year. Elz and Karen’s housemate, Marian, said that moving to the UK had been a dream of hers for a long time, but “…being able to make it happen and overcome the barriers along the way has always been nearly impossible at times, [however] the Resource Finder team showed me a route to follow that would bring me to my dreams. It came at no cost and with not a lot of stress because of their constant help and support.”
There’s nothing quite like the simple pleasures of home cooked food. However, when you’re away from your family and living in another country, sometimes certain tastes can take you back. This month we have an amazing recipe for Chicken Inasal for you to try… just like your mother used to make. Or why not send in your own recipes and we’ll publish them here!
2lbs Chicken cut into serving pieces
2 tablespoons of ginger, minced
2 tablespoons of garlic, minced 3/4 cup of lemongrass, chopped
1 cup of coconut vinegar
1/2 cup of lemon or calamansi juice
1 tablespoon of salt
1/4 cup of brown sugar
1 cup of lemon soda (soft drink)
1/2 tablespoon ground black pepper
3 tablespoons of annatto oil (atsuete oil)
1/2 cup of margarine, softened
1/4 teaspoon of salt
1 teaspoon of lemon or calamansi juice
In a freezer bag or large bowl, combine the chicken, lemongrass, salt, ground black pepper, ginger, garlic, brown sugar, vinegar, lemon-lime soda, and lemon juice. Stir or shake the mixture until every ingredient is well incorporated. Marinate the chicken for 1 to 3 hours. In a bowl, combine the margarine, annatto oil, salt, and lemon juice and then stir. Set aside. Grill the chicken whilst basting with generous amounts of the margarine mixture. Transfer the grilled chicken to a serving plate and serve with sinamak… Yum!!
You know that Christmas is around the corner when pantomimes appear at your local theatre. This year, Hull New Theatre are playing the English Classic: Peter Pan. Running until the 31st of December, tickets are available between £13 to £30.
Fancy gliding round a skating rink to get you in the mood for Christmas? Bring your friends to an outdoor eco-friendly rink, surrounded by twinkling Christmas trees at William’s Den in North Cave. If you don’t skate, there’s always hot chocolate, mulled wine, and warm Belgian Waffles! Open from 9.30 to 4.30 until Christmas Eve.
Over the festive holidays, why not visit the Penguins at The Deep on Tower Street in Hull. This award-winning aquarium houses them in their year-round winter wonderland! You’ll also find Sharks, Jelly Fish, and an Octopus (who likes to escape!) on you travels around the venue. Tickets can be bought online for £11.25.
Let in some sunlight. Lack of sunlight means that your brain produces more of a hormone called melatonin, which makes you sleepy!
Get a good night’s sleep. With shorter days, it may be tempting to go ‘full bear’ and hibernate for the winter. However, too much sleep could make you sluggish during the day.
Get regular exercise. Although a job in Nursing should be all you need!
Eat the right food. Avoid chocolate and sweets as the energy rush you’ll receive will quickly wear off.
